Braised Italian Beef Short Ribs

Ingredients

2 pkgs (about 1 1/2 lbs. each) Wegmans Boneless Beef Short Ribs 
2 tsp Wegmans Garlic Herb Seasoning Shak'r 
2 Tbsp Wegmans Organic Extra Virgin Olive Oil
2 pkgs (7 oz each) Wegmans Diced Mirepoix (Produce Dept)
2 containers (16 oz each) Wegmans Marinara Sauce (Dairy Dept)
1/2 cup water, divided
Optional: 1 pkg (17.6 oz) Wegmans Amore Mafaldine Pasta, cooked per pkg directions
Optional: Italian Classics Grated Pecorino Romano (Cheese Shop), to taste

Directions

Preheat oven to 350 degrees. Season short ribs with garlic herb seasoning. 

Heat oil in braising pan on MED-HIGH until oil faintly smokes. Add short ribs to pan; sear each side about 4 min until browned and caramelized. 

Add mirepoix and marinara sauce. Rinse each sauce container with 1/4 cup water; add this liquid to pan. Stir. Bring to simmer. Cover. Braise in oven 2 1/2 hours until tender. 

Optional: Shred beef and toss with sauce and cooked pasta. Sprinkle with grated cheese

Sheet Pan Mediterranean Chicken Shawarma

Ingredients

1 Tbsp Wegmans Organic Garlic Stir-In Paste 
1/4 cup fresh lemon juice 
1 container (11 oz) Wegmans Organic Tahini 
3/4 cup + 2 Tbsp ice-cold water 
3/4 tsp salt 
1 (about 3/4 lb.) red onion, peeled, sliced 
3 Tbsp Wegmans Organic Extra Virgin Olive Oil, divided 
6 (about 1 3/4 lbs.) Wegmans Boneless Skinless Chicken Thighs 
2 Tbsp Wegmans Tuscan Seasoning Shak'r 
2 Wegmans Kosher Dill Spears, cut in strips, divided 
Optional: 2 pkgs (12 oz each) Wegmans Organic Grain & Vegetable Blends Bulgur, Barley & Red Quinoa, cooked per pkg directions, divided 
Optional: Wegmans Habanero Hot Sauce, to taste 
Optional: 1 1/2 pkgs (6 pitas) Wegmans Organic Whole Wheat Pita Bread, sliced in half, warmed

Directions

Preheat oven to 450 degrees. Make tahini sauce: Add garlic and lemon juice to bowl. Let rest 2 min to mellow garlic flavor. Add tahini, water, and salt. Whisk until smooth. Set aside. 

Add onions and 1 Tbsp oil to large bowl; toss to combine. Arrange onions in single layer on one half of parchment paper-lined baking sheet. Add remaining oil, chicken, and Tuscan seasoning to same large bowl; toss to combine. Arrange chicken on other half of baking sheet. 

Roast 20-25 min; remove pan from oven. Carefully transfer chicken to cutting board; slice. Return chicken to pan. 

Increase oven temp to BROIL. Broil 3-5 min until chicken is crispy. Serve as desired with 2 Tbsp tahini sauce and pickles. Serving suggestions: 

Make a bowl: Divide cooked grain blend evenly into 6 bowls. Top each evenly with chicken, onions, pickles, and 2 Tbsp tahini sauce. Optional: Drizzle with hot sauce. 

Make a pita: Spread 1 Tbsp tahini sauce on inside of each pita half. Divide pickles evenly into pitas; top evenly with chicken and onions. Optional: Drizzle with hot sauce.
